Where possible a cold store should be built as “a room inside a room”. When the room outside is kept constantly heated, there will always be a stable drop in temperature next to the cold store, and thus the inwards transport of moisture throughout the year.
With the other option, the direction of moisture transport will vary with the outdoor temperature. Conditions are simplest for cold stores with a low temperature (5°C or lower). On the other hand, during the winter, moisture will be transported outwards. The transport of moisture during the spring, summer and autumn is considered to be the most critical since temperatures during these seasons provide the greatest risk of mould forming in the building construction. For cold stores with high temperatures (higher than 5°C), the transport of moisture is so complicated and the risk of mould forming is so great, that a special technical moisture analysis is recommended in each individual case.
